Waterville chocolatier hand-crafting small-batch bonbons with Maine-sourced fillings: whiskey, sea salt, maple syrup, and craft beer.

Christopher Hastings Confections opened at 24 Common Street in Waterville in September 2018, named for the middle names of partners Mark Simpson (the chocolatier) and Nate Towne (the marketing and sales side). Simpson trained as a chocolatier and approaches the work as a science nerd, hand-painting polycarbonate molds with cocoa butter and filling them with tempered chocolate for the shop's signature bonbons. Maine sourcing runs deep: the Maine Whiskey Sea Salt Caramel uses whiskey from Maine Craft Distilling in Portland and sea salt from Eggemoggin Salt Works on Deer Isle; the Maine Beer Nut Maple Creme uses dark syrup from Strawberry Hills Farm in Skowhegan and beer from Bigelow Brewing or Waterville Brewing Company. Other signatures include Lavender Honey Tea and a Kennebec River-inspired bonbon released for the RiverWalk dedication. Chocolate-making classes are offered seasonally.
