Chef Jordan Rubin and Marisa Lewiecki started Mr. Tuna as a sushi cart in 2017, moved into the Public Market House in 2018, and in 2024 opened a brick-and-mortar at 83 Middle Street with a 30-seat sushi bar and seasonal outdoor seating. Rubin's hyper-focus on quality — including a deep local bluefin program that uses super-freezing and careful aging to keep Atlantic bluefin on the menu most of the year — earned a James Beard semifinalist nod for Best Chef Northeast and a Food & Wine Best New Chef honor in 2025. Mr. Tuna was named #6 Best Restaurant in the Country by Food & Wine and won an Innovation Award from the Gulf of Maine Research Institute for responsible sourcing.
