Aomori opened in December 2025 at 52 Hanover Street in Portland's West Bayside, on the ground floor of the Armature building within Hanover Works. The 44-seat restaurant is a family project led by acclaimed chef Masahiko Miyake — founder of Miyake and Pai Men Miyake — alongside his wife Chieko, son Reo, and Reo's partner Helen Carter. The menu draws on Japanese home cooking and the traditional flavors of the Tohoku region in northeast Japan, paired with Maine ingredients and seasonality. Standouts include the shio-koji marinated whisky pork and a six-course seasonal kaiseki. An adjacent Aomori Kitchen + Market offers conbini-style ready-to-go food.
